Foodie Friday...On Saturday

I had every intention of actually posting Foodie Friday on Friday...unfortunately I get sick on my way to work Thursday night...toughed it out and came home to sleep all day...sorry. So, today's recipe (pretend it's Friday) is Low Cal Buffalo Wings! Most of my new recipes will most likely be low cal and somewhat healthy. The reason for this has a somewhat lengthy explanation, but I'll sum it up the best I can. First just let me say that since getting married, a bowl of macaroni, a Ramen or a can of soup no longer counts as a meal. Apparently these things do not fill up a 24 year old man. Therefore I try to cook every night I'm off and have successfully managed to gain weight. Well, now Jordan is on a "cleaning" diet because he is training for his first half marathon in April! This presents me with the challenge of cooking meals of only white meat chicken, veggies and other healthy (yucky) foods. So, my mission is to make healthy-ish food more yummy. Hence the reason this is low cal and all...and I need to branch out and cook this way if I'm going to lose 10 pounds!

This recipe is pretty simple. 20 minutes of prep and 20 minutes to cook.

Low Cal Buffalo Wings

16 oz. raw boneless skinless chicken breasts cut into strips

4 oz (about 18 chips) of Barbecue baked Lay’s potato chips and 18 saltine crackers
ground to bread crumb-like consistency in food processor

Franks Red Hot Sauce and 1 Tbsp of lemon juice

Dash of onion powder

Dash of garlic powder

Dash of cayenne pepper

Dash of black pepper

Dash of salt

Directions:

Preheat oven to 375 degrees. Grind potato chips and crackers to bread crumb
consistency and place in bowl. Add all of the seasonings and mix well. Place chicken in
separate bowl and cover with Franks Red Hot sauce and lemon juice mix. Spray a cookie
sheet with non-stick spray. Remove chicken pieces one at at a time and gently shake so
the piece isn’t dripping. Roll in crumb mixture and place on cookie sheet. Place in oven
an cook for 10 minutes, then flip and cook for an additional 10 minutes, or until outsides
are crispy and chicken is cooked throughout. Makes 4 servings.

Total calories for entire batch is approximately 1300.

I would have taken a picture, but they didn't look very pretty and I think it is odd to take pictures of food, but they were delicious and you would never guess they are low cal! I promise!

Also, just an update on one of my resolutions...not biting my nails..still going strong! Now if my hair would grow just as fast! I cut this much off in Novemeber...



And it is only about an inch longer than this...



Come on! Grow hair grow!
