Cajun Macaroni

Trying to catch up on the recipes!  So far I have three I need to post and I might have J guest post because he is a really good (and creative and messy) cook!

This recipe is super fast and easy and Jordan loved it!

All you need is...

1/2 pound ground meat
1 box of macaroni
1/3 cup chopped onion
1/3 cup chopped green pepper (we didn't have one...)
1 can (14 1/2 ounce) diced tomatoes, undrained (left these out too, Jordan's allergic)
1 1/2 teaspoons Cajun seasoning (we made our own...I have no idea what was in it)
2 tablespoons milk
1 tablespoon butter

In a large sauce pan (I used a skillet), cook the beef, onion, green pepper and celery over medium heat until meat is no longer pink; drain.  Add tomatoes and Cajun seasoning.  Cook uncovered for 15-20 minutes, stirring occasionally.

Meanwhile, prepare macaroni and cheese mix, using 2 tablespoons milk and 1 tablespoon butter, stir in beef mixture, cook for 2-5 minutes or until heated through.

This was super easy and pretty good!  Tomorrow I'll post the recipe for Garlic Chicken Breasts...another quick and easy one...I mean, I made it after getting home from work at 8 o'clock at night and it was delicious.

On another note, I feel I should let readers know I am still running and to be looking forward to posts about that coming in April!
