Parmesan Crusted Tilapia...Yum!

It's March!  And that means, even weirder weather, time change, spring break and...new recipes! Todays recipe Parmesan Crusted Tilapia.  I have never cooked fish in my entire life, but we're trying to eat more of it and less red meat, and I got a good deal on a ton of tilapia, therefore I will be learning different ways to cook this stuff.  The Parmesan Crusted Tilapia was SUPER easy and didn't take long at all.  Here's what you need:

4 tilapia fillets
3/4 cup grated Parmesan cheese
2 teaspoons paprika
1 tablespoon parsley (it says fresh chopped...I used dried)
salt and pepper to taste
olive oil

1.  Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil.
2.  Mix Parmesan cheese, paprika, and parsley in a shallow dish; season with salt and pepper.
3.  Drizzle tilapia fillets with olive oil and dredge in the Parmesan cheese mixture. Place fillets onto the prepared baking sheet.
4.  Bake in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.

 
 
 
And there you have some super yummy tilapia. (It's great leftover, too!)
 
 
On another subject, I was incredibly blessed to have been able to go to Spring Sing at my alma mater Oklahoma Christian this weekend.  I got to catch up with friends, see a great show and just had an overall great time!
