Tex Mex Turkey Burgers

It's Monday, March 25, and it's COLD!  I am supposed to run 4.5 miles today...I believe I will be treadmill-ing it up instead of running outside!  On another topic, project eating healthy is still a work in progress.  I have to remind myself to eat more slowly (even when I only have a 30 minute lunch and most work days I am starving when I get home) and to eat smaller.  I have to remind Jordan that we are not trying to win a body building or figure competition (trust me, I'd die if I had to eat on a diet like that) and with all those components, we're getting there.  Today's recipe, as promised, is Tex-Mex Turkey Burgers...super yummy and easy!

Tex-Mex Turkey Burgers

1 pound ground turkey
1 envelope reduced sodium taco seasoning
1 cup dried cilantro flakes (I don't like cilantro, so I didn't use it)

In a large bowl, combine the turkey, taco seasoning and cilantro; shape into four patties.  Grill, covered, over medium heat or broil 4-6 inches from the heat for 5 minutes on each side.

Sprinkle cheese over burgers; grill 2-3 minutes longer or until a meat thermometer reads 165 degrees and juices run clear.

Serve on whole grain buns.

We don't have a grill, so I broiled them and it worked really well.  I have a hard time getting used to the texture of turkey, but for me, if the meat is a little dry (like the next day and it's been reheated) it's more like ground meat...but I have texture issues with my food...which could be a post on it's own...so take that for what it's worth.
