No post yesterday because I went to work with Jordan and FINALLY conquered my 4.5 mile run. Guys, trying to run any sort of distance on a treadmill just flat out SUCKS, and therefore did not happen Monday.
Today's recipe is another for tilapia. The original recipe was written to be cooked in vegetable oil in a skillet...and that's just not as healthy as it could be, so I'm calling it Baked Spiced Tilapia.
3 tbsp paprika
1 tbsp onion powder
1 pinch garlic powder
1 tsp black ground pepper
1 tsp cayenne pepper
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp celery seed
1/2 tablespoon salt
4 tilapia fillets
Mix all spices together in bowl or sealed container. Drizzle olive oil over fillets, then dredge through spice mix. Place on baking sheet and put in oven that has been preheated to 400 degrees. Bake for 12 minutes.
Now, for the better tasting brown rice...1 can of chicken broth equals 2 cups of dry brown rice...so I just boiled the chicken broth, added a little garlic and onion powder and let the rice soak it all up...much better tasting, though I don't imagine it added any nutritional benefits.
I currently don't have any other recipes that I've tried, so y'all may be in luck and not have to put up with anymore recipe posts. ;)
